Ricotta Toast With Roasted Grapes

This vibrant pairing brings out the best in both the wine and the dish. Coeur Blanc’s elegant notes of citrus, white florals, and cream beautifully complement the sweet-savory balance of this roasted grape and ricotta toast. The recipe layers honeyed fruit with a touch of herbs and creamy ricotta for an appetizer that’s as impressive as it is effortless. Perfect for summer entertaining or a refined snack.

Ingredients

  • 3 cups seedless red grapes, washed
  • 1 tbsp extra-virgin olive oil
  • ¼ tsp kosher salt, plus more for serving
  • 2 springs of fresh thyme (or rosemary)
  • 4 slices sourdough bread (or baguette/crostini) 1/2" thick
  • 1 cup whole milk ricotta cheese
  • Honey (for drizzling)

Directions

  • Preheat oven to 425 F
  • On a baking sheet, toss the grapes with olive oil, salt, and thyme
  • Roast for about 30 minutes, or until the grapes are blistered and bubbling.
  • Remove from oven and let cool slightly.
  • Prepare the ricotta: While grapes are cooling, spread the ricotta cheese onto each slice of toasted bread. You can whip the ricotta with lemon zest for added flavor if desired.
  • Assemble and serve: Top the ricotta-covered toast with the roasted grapes. Drizzle with honey and a pinch of salt (optional) and serve immediately.
