The Coeur Blanc is a special and limited-production white wine crafted from fully mature Pinot Noir grapes. At harvest, 100% estate-grown grapes from carefully selected vineyard blocks are handpicked and meticulously sorted. The grapes are then gently whole-cluster pressed, limiting contact with the grape skins so that only the “white heart” juice is expressed. The resulting juice is barrel fermented in French oak and then aged on the lees prior to bottling.
This wine is a fruity and floral White Pinot Noir. It starts with lemongrass and lavender on the nose, followed by chamomile and tea-like notes. The Domaine Serene 'Coeur Blanc' white Pinot Noir is a fruity, crisp wine with a light raspberry flavor and hints of white floral and chamomile. It has a golden apple finish with notes of bartlet pear. The 'Coeur Blanc' undergoes the gentlest extraction of the Pinot Noir grape and only uses 2/3 of the grape, to capture the nuances of the fruit without the color. This is a beautifully balanced wine with minerality and hints of savory herbs on the long finish. This wine is perfect for pairing with tuna tartar or any light fish dish.
